What is pizza al taglio? Roman pizza by the slice, every Wednesday in Okayama
On Wednesdays at Lemon Tree Okayama, the oven is all about pizza al taglio. But what exactly is it, and how is it different from the round pizza everyone knows?

A pizza born in Rome
Pizza al taglio was born in Rome. It's baked in large rectangular trays and cut into slices of whatever size you like. In Rome you buy it at the counter, often by weight, and eat it standing up or on the go, with your hands.
It's an everyday snack: mid-morning, at lunch, after school.
I remember having it as an afternoon snack in the park with my friends when I was a kid. To taste more flavours, we'd sneak bites of each other's slices.
Pizza al taglio vs round pizza
・Shape: a rectangular tray instead of a disc.
・Portions: it's cut into slices, so you can try different flavours.
・Dough: thicker and airier, crisp underneath and soft inside.
・How to eat it: with your hands, no fuss.
Our pizza al taglio
We use a special Italian dough made with wheat, rice and soy flours and natural leavening. It's crisp outside and soft inside, stays crispy even as it cools, and is easier to digest than typical pizza.
Toppings change with the day and the season: discovering them when you arrive is part of the fun.

The Wednesday set
・Pizza set ¥1,950: salad + pizza of your choice + drink
・Set with dolce ¥2,200: salad + pizza of your choice + drink + dolce
Prices include tax. Pizza is eat-in only: we want you to have it fresh from the oven.
